Lamb Mince lean 1kg 5kg 10kg
Coriander ground  10g 240g 600g
Paprika Smoked 30g 150g 300g
Cumin ground 10g 50g 100g
Garlic crushed 5gr 25g 50g
Haloumi Cheese diced 50g 250g 500g
Coriander or flat leaf parsley  chopped 1/3 bunch 1 bunch 2 bunch
Egg 1 5 10
       
Garnish      
Pomegranate 1    
Lemon Zest 1    

Preparation

BUTCHER – PREPARATION/METHOD

  1. Mince lamb twice through a medium plate.
  2. Place mince in a tub/bowl.
  3. Add smoked paprika, cumin and ground coriander.
  4. Add in egg and hand mix until well combined.
  5. Finely dice halloumi cheese and coriander or flat leaf parsley and add to mixture.
  6. Hand mix until all ingredients are well combined.
  7. Roll mixture into 80-100 grams balls and then press out with a burger press.

Garnish 

  • Garnish with lemon zest and pomegranate seeds.
  • Add 60grams breadcrumbs per kilo to soften these burgers up if needed.

Cooking Tip

  • CUSTOMER – INSTRUCTIONS FOR REHEATING/PREPARATION

    1. Heat 20ml of oil in a non-stick pan over a medium heat.

    2. Cook burgers for 8-10 minutes turning often until browned and          cooked through.
