Beef Osso Buco Indian Beef Shin Parcels

Ingredients

Osso Buco (hind shank) 1 4 10
Streaky Bacon thin slice 2 8 20
Onion Diced  1/2 2 4
       
Dry Seasoning      
Smoked Paprika  
1tbs 4tbs 10tbs
Chilli Powder   1tsp 4tsp 10tsp
Cumin   1tbs 4tbs 10tbs
Ground Coriander 1tbs 4tbs 10tbs
Turmeric  1tbs 4tbs 10tbs
Nutmeg   1/2tsp 2tsp 5tsp
Garamond Masala 1/4tsp 1tsp 2.5tsp
Fennel Seed Powder  1/2tsp 2tsp 5tsp
       
Garnish      
Ginger match sticks      
Mini tomatoes haved      
Parsley      

Preparation

BUTCHER – PREPARATION/METHOD

  1. Sprinkle seasoning over osso buco and massage in 
  2. Shingle streaky bacon over one quarter of the meat. 
  3. Add garnish and plate up 

CUSTOMER – INSTRUCTIONS FOR REHEATING/PREPARATION

  1. Sear osso buco in hot pan and remove  
  2. Fry off diced onion add to pan 
  3. Add diced tomatoes, coconut milk, beef stock and grate some cane sugar on top. 
  4. Place meat in casserole dish and cook for 3 hours lid on or until meat is falling off the the bone.  
  5. Serve with basmatti rice and steamed vegetables
