Fennel seeds crushed 2tsp 4tsp 8tsp
Garlic crushed 2tsp 4tsp 8tsp
Lemongrass finely chopped 2tsp 4tsp 8tsp
Coconut cream   .5 cup 1 cup 2cup
Salt   .5 tsp 1tsp 2tsp
Wooden skewers   10 20 40

Preparation

Butcher – Preparation/Method

  1. Combine marinade ingredients – cumin through salt – in a large bowl. Whisk well.
  2. Add diced lamb leg and stir to evenly coat. Tightly thread cubes onto small skewers.
  3. Transfer satay skewers to a tray or platter for display. Line tray with large green leaves or banana leaves, if desired.

Customer – Instructions for Preparation

  1. Preheat bbq or a heavy-based pan to medium-high.
  2. Drizzle skewers with oil and cook 2 - 3 mins per side, until edges are charred and lamb is cooked to your liking.

Serving Suggestion

  • Serve with steamed rice, sliced veggies, satay sauce
