Lamb Souvlaki Skewers

Make delicious Lamb souvlaki using Lamb leg steaks.

Ingredients

Ingredients: 

  • 800g trimmed lamb leg steaks, cut into 2 - 3 cm cubes
  • Juice from two lemons
  • Zest from two lemons
  • ⅓ cup olive oil
  •  4 cloves garlic, crushed
  •  1 ½ Tbsp dried oregano
  •  1 tsp cumin
  •  1 tsp cracked black pepper
  •  1 tsp salt

Preparation

Preparation:

  1. In a large dish or zip-top bag, combine lemon juice, zest, olive oil, garlic, oregano, cumin, pepper, and salt. Add lamb cubes and coat well with marinade. Refrigerate 2-4 hours.
  2. When ready to make, drain excess marinade and thread lamb onto skewers.
  3. Garnish and place in display or vacuum pack for the pre pack area

Cooking Information:   

 

  1. Preheat bbq grill or heavy-based pan to high. Cook lamb skewers for 5-6 minutes, turning to sear all sides. Transfer to a serving platter, cover with foil, and rest 5 minutes.
  2. Combine parsley, cucumber, tomatoes, olives, oil, and vinegar in a bowl. Season to taste with salt and pepper. Serve lamb souvlaki with salad, wraps, pickled onion, and tzatziki.
