Ingredients

Ingredients 1 unit 5 units
Lamb Shoulder Boneless    
Seasoning    
Maple Syrup 50ml 250ml
Roast Lamb spice mix 15gr 75gr
Water 50ml 250ml
Panko crumbs 100gr 500gr
Garnish    
Fresh Rosemary - sprigs    
Fresh Thyme - leaves    
Unsalted Walnuts    

Preparation

BUTCHER – PREPARATION/METHOD

  1. Trim lamb shoulder and remove excess fat
  2. Mix seasoning well
  3. Lay shoulder flat and butterfly until even thickness
  4. Place seasoning in centre and roll up evenly
  5. Place 4 slits on each top side of the roast and push rosemary sprigs in
  6. Garnish with Thyme leave and walnuts

 

Note: *Be wary of using nuts in seasonings due to alergies *

 

CUSTOMER – INSTRUCTIONS FOR REHEATING/PREPARATION

Cook @ 160c for 2 hours for 1.5kg roast

Tip- Use a water bath in oven to add moisture
