Topside Schnitzel Cut slices approx. 200mm x 200mm x 3mm thick  10 20 40
Shallots Sliced thinly 10gr 20gr 40gr
Sausage Mince approx 80gr per unit  .800gr 1.6kg 3.2kg
Provolone Cheese slices   or use rubbery cheese 10 pieces

Preparation

Butcher Instructions:

  1. Topsed Schnitzels 200mm x 200mm x 3mm thick
  2. Mix beef or lamb sausage mince with pomegranate seeds & shallots and roll into small 80gram balls
  3. Lay schnitzel flat
  4. Place provolone cheese in centre of schnitzel.
  5. Place mince ball ontop of cheese
  6. Roll schnitzel around folding schnitzel under the mince to create a round ball.
  7. Place an elastic loop around the outside to hold ball in place.
  8. With cheese side up slice a cross into the top of the steak, going through the steak and cheese.
  9. Fold edges out and use 2 elastic loops making a cross on top of steak. Fold edges out to create a tulip.
  10. Baste outside of Tulip with BBQ sauce or marinade
  11. Garnish with a few pomegranate seeds and fresh thyme

Butchers Tip:

  • Substitute pomegranates for mixed veg or make vege mix sausage mince (carrots, celery, onion etc) or use flavoured sausage mince
  • Substitute BBQ sauce with popular marinade
  • Substitute Provolone for a rubbery cheese slices

 

Cooking Instruction:

Bake for 30 minutes in a 180-degree preheated oven or until internal temp of 70C
