Ingredients

Beef Rump Sliced thin 600 grams 6 KG 12 KG
Garlic  Crushed 10gr 100gr 200gr
Coriander Ground 10gr 100gr 200gr
White Pepper  Ground 5gr 50gr 100gr
Brown Sugar /Palm Sugar   15gr 150gr 300gr
Fish Sauce   15ml 150ml 300ml
Soy Sauce   15ml 150ml 300ml
Coconut Cream   120ml 1200ml 2400ml
         
Wooden Skewers   12 120 240
Fresh Coriander  Garnish       

Preparation

Butcher – Preparation/Method
1. Combine marinade ingredients – garlic through coconut cream – in a large bowl. Whisk
well.
2. Add beef strips to the bowl with the marinade and toss to coat evenly. Refrigerate 4 hrs,
or up to 24 hrs, to marinate.
3. Weave beef strips onto skewers, bunching together as to not leave any gaps.
4. Transfer skewers to a tray or platter for display. Garnish with fresh coriander, if desired.


Customer – Instructions for Cooking
1. Preheat bbq or a heavy-based pan to high. Drizzle skewers with a bit of oil.
2. Cook skewers 3 - 4 mins, turning to evenly char all sides, until done to your liking.
3. Transfer to a platter and rest 5 mins. Serve with lime wedges and fresh coriander.
