Butcher – Preparation/Method
1. Combine marinade ingredients – garlic through coconut cream – in a large bowl. Whisk
well.
2. Add beef strips to the bowl with the marinade and toss to coat evenly. Refrigerate 4 hrs,
or up to 24 hrs, to marinate.
3. Weave beef strips onto skewers, bunching together as to not leave any gaps.
4. Transfer skewers to a tray or platter for display. Garnish with fresh coriander, if desired.
Customer – Instructions for Cooking
1. Preheat bbq or a heavy-based pan to high. Drizzle skewers with a bit of oil.
2. Cook skewers 3 - 4 mins, turning to evenly char all sides, until done to your liking.
3. Transfer to a platter and rest 5 mins. Serve with lime wedges and fresh coriander.
