Processing

Australian processing facilities operate under strict Federal Government legislation. The humane treatment of livestock during the slaughter process in the abattoir is paramount, as is the focus on maintaining quality and safety throughout. The Australian meat processing sector is a world leader in beef and lamb dressing and fabrication. Australian abattoirs employ the latest technologies to ensure continued improvement in production efficiency without sacrificing superior levels of meat safety.

Processors deliver high quality, safe and nutritious red meat products to Australian and global consumers

Australia is home to around 300 abattoirs (including boning rooms), with a workforce of around 34,600 people. While plants differ in design each utilises the most up to date technology to ensure efficiency, safety and reliability. Australian red meat travels a pre-set pathway, passing through stockyards, the slaughter floor, chillers, boning rooms, packaging areas and freezers through to being loaded out in refrigerated shipping containers and trucks. All the while, processors protect the integrity of the product through an array of hygiene, food safety, quality assurance, animal welfare, environmental and workplace health and safety regulations and procedures.
